I've been living with my bestfriend for a couple years now, it's not through the courts or anything, so we don't have legal guradianship documents, but her mom is my guardian now, could she still sign for me without having the papers?

No, it has to be your legal guardian. Unless you go to some sketchy ass place that doesn't care.
